Ingredients:

  • 2 cups fresh blueberries
  • 1 cup lemon juice
  • 1 lemon, zested
  • 1 cup granulated sugar
  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup water

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a 9x13 inch baking dish, combine the fresh blueberries, lemon juice, lemon zest, and granulated sugar. Mix gently to coat the blueberries.
  3. Sprinkle the dry yellow cake mix evenly over the blueberry mixture.
  4. In a separate bowl, mix the melted butter, baking powder, salt, and water until well combined. Pour this mixture evenly over the cake mix layer.
