Ingredients:

  • 2 chicken breasts
  • 1 cup rice (white or brown)
  • 2 cups broccoli florets
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups chicken broth (for cooking rice)
  • Lemon wedges for garnish

Instructions:

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  3. While the chicken is marinating, rinse the rice under cold water until the water runs clear. In a medium pot, bring the chicken broth to a boil and add the rice. Reduce heat to low, cover, and simmer for 15-20 minutes (or according to rice package instructions) until the rice is cooked and fluffy.
  4. In the final 5 minutes of cooking the rice, bring a pot of water to a boil. Add the broccoli florets and steam for 3-4 minutes until bright green and tender-crisp. Drain and set aside.
  5. Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side until cooked through and internal temperature reaches 165°F (75°C).
  6. To serve, place a scoop of rice on each plate, top with grilled chicken, and arrange steamed broccoli alongside. Garnish with lemon wedges for an extra burst of flavor.
