Ingredients:

  • 1 cup white rice
  • 2 cups vegetable broth or water
  • 1 tablespoon olive oil
  • 2 cups fresh green beans, trimmed
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, combine the white rice and vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed.
