Ingredients:

  • 1 lb large prawns, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Juice and zest of 1 lemon
  • Salt and pepper to taste
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon lemon juice (for quinoa)

Instructions:

  1. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is fluffy. Stir in lemon juice, parsley, and basil.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sauté for about 1 minute until fragrant.
  3. Add prawns to the skillet. Season with salt, pepper, lemon juice, and lemon zest. Cook for about 3-4 minutes, until prawns are pink and cooked through.
  4. Serve the prawns over a bed of herbed quinoa, garnished with additional parsley and lemon zest if desired.
