Ingredients:

  • 8 oz spaghetti or linguine
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 lemon, zested and juiced
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 2 fillets of white fish (such as cod or tilapia)
  • 1 tsp dried oregano
  • 1 tbsp butter

Instructions:

  1. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.
  2. While pasta is cooking, season the fish fillets with salt, pepper, and dried oregano.
  3. In a grill pan or skillet, heat 1 tablespoon of olive oil over medium heat. Grill the fish for about 4-5 minutes on each side or until cooked through. Remove from heat and set aside.
  4. In the same pan, add the remaining olive oil and sauté the minced garlic until fragrant, about 1 minute.
  5. Pour in the white wine and let it simmer for 2-3 minutes, allowing the alcohol to evaporate slightly.
  6. Add the lemon zest, lemon juice, red pepper flakes (if using), and the reserved pasta water. Stir to combine.
  7. Add the drained pasta to the sauce, tossing to coat well. Stir in butter, and adjust seasoning with salt and pepper as needed.
  8. Serve the pasta topped with the grilled fish and garnish with fresh parsley.
