Ingredients:

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (penne or fusilli)
  • 1 cup cooked rice
  • 2 tablespoons olive oil
  • 1 lemon (juice and zest)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Parmesan cheese (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt, pepper, and half of the lemon zest.
  3. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked. Remove from the skillet and let rest.
  4. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add the cooked rice and stir to combine.
  5. Add the cooked pasta to the skillet, along with lemon juice, remaining lemon zest, oregano, and basil. Toss everything together until well combined. Adjust seasoning to taste.
  6. Slice the cooked chicken and serve it on top of the pasta and rice mixture. Garnish with fresh parsley and Parmesan cheese if desired.
