Ingredients:

  • 1 lb chicken thighs, boneless and skinless
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1/4 cup slivered almonds, toasted
  • Fresh parsley, chopped for garnish

Instructions:

  1. In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, thyme, rosemary, salt, and pepper. Add chicken thighs and marinate for at least 30 minutes.
  2. In a pot, bring chicken broth to a boil. Add jasmine rice, reduce heat to low, cover, and simmer for 15 minutes or until rice is cooked and liquid is absorbed.
  3. While the rice is cooking, heat a skillet over medium-high heat. Add marinated chicken and cook for 5-7 minutes on each side until golden brown and cooked through.
  4. Once the chicken is cooked, remove from heat and let rest for a few minutes before slicing.
  5. Fluff the rice with a fork and serve on plates. Top with sliced chicken, sprinkle with toasted almonds, and garnish with fresh parsley.
