Ingredients:

  • 2 cups jasmine rice
  • 4 chicken thighs, boneless and skinless
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, sliced for garnish

Instructions:

  1. Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions and set aside.
