Ingredients:

  • 2 cups jasmine rice
  • 4 chicken thighs, boneless and skinless
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup green onions, sliced
  • 1/2 cup cherry tomatoes, halved

Instructions:

  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Let marinate for at least 30 minutes.
  3. Cook the jasmine rice according to package instructions. Once done, fluff with a fork and mix in chopped parsley and green onions.
  4. Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
  5. Remove the chicken from the grill and let it rest for a few minutes before slicing.
  6. To serve, place a generous portion of the herb-infused rice in a bowl, top with sliced grilled chicken, and garnish with cherry tomatoes and additional parsley if desired.
