Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 lemons (juice and zest)
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • Salt and pepper to taste
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/4 cup fresh cilantro (chopped)
  • 1 lime (juice and zest)

Instructions:

  1. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, and pepper.
  2. Add the chicken breasts to the marinade, ensuring they're well coated. Cover and refrigerate for at least 30 minutes.
