Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • 1 pound Yukon Gold potatoes, peeled and cubed
  • 1/4 cup milk (or dairy-free alternative)
  • 2 tablespoons butter (or dairy-free alternative)
  • 2 cloves garlic, minced

Instructions:

  1. In a bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper to create the marinade.
  2. Place the chicken breasts in a resealable bag or shallow dish, pour the marinade over, and let it marinate in the refrigerator for at least 30 minutes.
  3. While the chicken is marinating, prepare the mashed potatoes. In a large pot, bring water to a boil and add the cubed potatoes. Cook until tender, about 15-20 minutes.
  4. Drain the potatoes and return them to the pot. Add milk, butter, minced garlic, and mash until smooth. Season with salt to taste.
  5. Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side, or until fully cooked and juices run clear.
  6. Serve the grilled chicken alongside the garlic mashed potatoes.
