Ingredients:

  • 4 chicken breasts
  • 2 lemons (zested and juiced)
  • 2 tablespoons olive oil
  • 2 garlic cloves (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup feta cheese (crumbled, optional)

Instructions:

  1. In a bowl, mix lemon juice, lemon zest, olive oil, minced garlic, oregano, thyme, salt, and pepper to create a marinade.
  2. Place chicken breasts in the marinade, cover, and refrigerate for at least 30 minutes.

  5. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, parsley, and feta cheese (if using). Toss gently to mix.
