Ingredients:

  • 2 salmon fillets
  • 2 tablespoons olive oil
  • 1 lemon (zested and juiced)
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh dill (chopped)
  • 1 teaspoon fresh parsley (chopped)
  • Salt and pepper to taste
  • 1 cup quinoa
  • 2 cups vegetable broth or water
  • 1 cucumber (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 bell pepper (diced)
  • 1/4 red onion (finely chopped)
  • 1/4 cup feta cheese (optional)
  • Fresh lemon wedges for serving

Instructions:

  1. In a bowl, mix olive oil, lemon zest, lemon juice, minced garlic, dill, parsley, salt, and pepper. Marinate the salmon fillets in this mixture for at least 30 minutes.
  2. While the salmon is marinating, rinse the quinoa under cold water. In a saucepan, combine the quinoa and vegetable broth (or water). Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until the quinoa is fluffy and liquid is absorbed.
  3. In a large bowl, combine the cooked quinoa, diced cucumber, cherry tomatoes, bell pepper, red onion, and feta cheese (if using). Drizzle with olive oil and season with salt and pepper. Toss to combine.
  4. Preheat the grill to medium-high heat. Grill the marinated salmon for about 4-5 minutes per side, or until cooked through and flaking easily.
  5. Serve the grilled salmon on a bed of quinoa salad, garnished with fresh lemon wedges.
