Ingredients:

  • 4 boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 1 teaspoon garlic powder
  • 1 teaspoon ground thyme
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach leaves
  • 1/4 cup chicken broth

Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Season the chicken thighs with salt and pepper on both sides.
  2. Add the chicken thighs to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the garlic powder and sauté for about 30 seconds until fragrant.
  4. Add the cherry tomatoes and cook for another 2-3 minutes until they start to soften.
  5. Stir in the spinach, lemon juice, lemon zest, ground thyme, rosemary, and chicken broth. Cook until the spinach is wilted.
  6. Return the chicken to the skillet and coat it with the sauce. Cook for an additional 2 minutes to heat through.
  7. Serve hot, garnished with additional lemon zest and herbs if desired.
