Ingredients:

  • 300g kangaroo fillet, thinly sliced
  • 2 stalks lemongrass, finely minced
  • 1 red bell pepper, sliced
  • 1 cup snap peas, trimmed
  • 1 carrot, julienned
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon fresh coriander, chopped
  • Cooked rice or noodles, for serving

Instructions:

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the minced lemongrass, garlic, and ginger, and sauté for 1-2 minutes until fragrant.
  3. Add the kangaroo fillet slices and stir-fry for about 3-4 minutes until browned and cooked through.
  4. Toss in the red bell pepper, snap peas, and carrot, and stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.
  5. Pour in the soy sauce and oyster sauce, and mix well to coat all the ingredients.
  6. Remove from heat and garnish with fresh coriander.
  7. Serve hot over cooked rice or noodles.
