Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 1 tablespoon fresh lemongrass, finely chopped
  • 1 tablespoon fresh mint, finely chopped
  • 1 teaspoon honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • Feta cheese, crumbled (optional)

Instructions:

  1. In a bowl, whisk together balsamic vinegar, lemongrass, mint, honey, olive oil, salt, and pepper.
  2. Place chicken breasts in a resealable bag and pour half of the dressing over them. Seal and marinate in the refrigerator for at least 30 minutes.
  3. Preheat the grill to medium-high heat. Grill the chicken for about 6-7 minutes per side, or until fully cooked. Remove from grill and let rest for 5 minutes before slicing.
  4. In a large bowl, combine salad greens, cherry tomatoes, cucumber, and red onion. Toss with the remaining dressing.
  5. Top the salad with sliced grilled chicken and sprinkle with feta cheese if desired. Serve immediately.
