Lentil and Leek Stew with Garlic

Ingredients:

  • 1 cup green or brown lentils, rinsed
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 1 large leek, cleaned and sliced
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon lemon zest
  • 2 cups fresh spinach or kale

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and sliced leek, and sauté until softened, about 5-7 minutes.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Stir in the lentils, vegetable broth, ground cumin, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 25-30 minutes, or until lentils are tender.
  4. Add fresh thyme, lemon zest, and spinach (or kale) to the pot and cook for an additional 5 minutes until the greens are wilted.
  5. Adjust seasoning as needed and serve warm.
