Ingredients:

  • 4 medium potatoes, diced
  • 1 large onion, thinly sliced
  • 4 cups lettuce (such as romaine or butter lettuce), chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or chives) for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, or until golden and tender, turning halfway through.
