Ingredients:

  • 1 cup salted butter, softened
  • 1½ cups sugar
  • 2 teaspoons almond extract
  • 3½ cups cake flour
  • 4 teaspoons baking powder
  • ½ teaspoon salt
  • 6 large egg whites, room temperature
  • 1½ cups milk, room temperature
  • 1 cup vanilla buttercream frosting (optional, for decoration)
  • Fresh berries (for garnish, optional)

Instructions:

  1. 1. Preheat your oven to 350 degrees F and grease three 9-inch round cake pans. Line the bottom with parchment paper for easy removal.
  2. 2. In a large mixing bowl, use a hand mixer to cream the softened butter and sugar together until light and fluffy. Beat in the almond extract until well combined.
  3. 3. In a separate bowl, whisk together the egg whites and milk until fully combined. Set this mixture aside.
  4. 4. In another mixing bowl, stir together the cake flour, baking powder, and salt until evenly mixed.
  5. 5. Gradually add 1/3 of the dry ingredients to the butter mixture, mixing until just combined. Then, add half of the milk mixture and combine. Repeat this process by adding another 1/3 of the dry ingredients, the remaining milk mixture, and finally the last of the dry ingredients, mixing until just combined. Scrape the sides and bottom of the bowl with a rubber spatula to ensure everything is mixed well.
  6. 6. Divide the batter evenly among the three prepared pans and smooth the tops with a spatula.
  7. 7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
