Ingredients:

  • 1 cup protein powder (chocolate flavor)
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup almond flour
  • 1/3 cup coconut oil, melted
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup stevia or erythritol
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons water (as needed)

Instructions:

  1. In a large mixing bowl, combine the protein powder, shredded coconut, almond flour, cocoa powder, stevia, and salt.
  2. Add the melted coconut oil and vanilla extract to the dry ingredients and mix until well combined.
  3. If the mixture is too dry, gradually add water, one tablespoon at a time, until a thick, moldable dough forms.
  4. Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

  6. Refrigerate for at least 1 hour to set.
