Ingredients:

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup erythritol or your preferred low-carb sweetener
  • 1/4 cup melted coconut oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 oz cream cheese, softened
  • 2 tablespoons powdered erythritol
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease an 8x8 inch baking dish.
  2. In a large bowl, whisk together the almond flour, cocoa powder, erythritol, baking powder, and salt.
  3. In another bowl, mix the melted coconut oil, eggs, and vanilla extract until well combined.
  4. Combine the wet ingredients with the dry ingredients and stir until just mixed.
  5. In a separate bowl, beat together the cream cheese, powdered erythritol, egg yolk, and vanilla extract until smooth.
  6. Pour half of the brownie batter into the prepared baking dish, smoothing it out evenly.
  7. Dollop the cream cheese mixture over the brownie batter, then pour the remaining brownie batter on top.
  8. Use a knife or a skewer to swirl the cream cheese mixture into the brownie batter gently.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  10. Allow to cool before cutting into squares and serving.
