Ingredients:

  • 1 cup pumpkin puree
  • 1 cup rolled oats (gluten-free if needed)
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup almond flour
  • 1/4 cup sugar-free sweetener (like erythritol or stevia)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (sugar-free)
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a large bowl, combine the pumpkin puree, almond milk, melted coconut oil, and vanilla extract. Mix well until smooth.
  3. In another bowl, whisk together the rolled oats, cocoa powder, almond flour, sugar-free sweetener, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the dark chocolate chips until evenly distributed in the batter.
  6. Pour the mixture into the prepared baking pan and spread it evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
