Ingredients:

  • 8 ounces linguine or spaghetti
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup dry white wine
  • 1 cup heavy cream
  • Juice of 1 lemon
  • Zest of 1 lemon
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • Grated Parmesan cheese, for serving

Instructions:

  1. Cook the linguine or spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, melt the butter and olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  3. Add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes per side. Remove the shrimp and set them aside.
  4. Pour the white wine into the skillet, scraping the bottom to deglaze. Let it simmer for 2-3 minutes to reduce slightly.
  5. Stir in the heavy cream, lemon juice, and lemon zest. Season with salt and pepper. Allow the sauce to simmer for another 3-4 minutes until slightly thickened.
  6. Return the shrimp to the skillet and toss to coat in the sauce. Combine with the cooked pasta, adding a little pasta water if needed to loosen the sauce.
  7. Serve immediately, garnished with fresh parsley and grated Parmesan cheese.
