Ingredients:

  • 1 cup makhana (fox nuts)
  • 1 ripe avocado, diced
  • 1 medium cucumber, diced
  • 1 medium tomato, diced
  • 1/4 red onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon chili flakes (optional)

Instructions:

  1. In a dry skillet over medium heat, roast the makhana until they are golden and crunchy, about 5-7 minutes. Set aside to cool.
  2. In a large bowl, combine the diced avocado, cucumber, tomato, red onion, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, salt, black pepper, cumin powder, and chili flakes (if using).
  4. Add the cooled makhana to the vegetable mixture.
  5. Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
  6. Serve immediately, garnished with additional cilantro if desired.
