Ingredients:

  • 1 cup rolled oats
  • 2 tablespoons ground flaxseed
  • 2 tablespoons hemp seeds
  • 2 tablespoons pumpkin seeds
  • 1 teaspoon cinnamon
  • 1/2 cup raisins
  • 2 tablespoons maple syrup
  • 1/4 cup walnuts, chopped
  • 2 cups almond milk
  • 1 tablespoon chia seeds
  • 1/2 cup yogurt (dairy or plant-based)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. In a medium saucepan, combine rolled oats, almond milk, ground flaxseed, chia seeds, cinnamon, and salt. Bring to a boil over medium heat.
  2. Reduce heat to low and simmer for about 5-7 minutes, stirring occasionally, until the oats are cooked and creamy.
  3. Once cooked, stir in maple syrup, hemp seeds, pumpkin seeds, and half of the walnuts.
  4. Remove from heat and let sit for a minute to thicken slightly.
  5. Serve warm in bowls, topped with yogurt, remaining walnuts, and raisins. Drizzle with extra maple syrup if desired.
