Ingredients:

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 2 cups peeled and diced apples (such as Granny Smith)
  • 1/4 cup maple syrup
  • 1/2 cup chopped pecans
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions:

  1. Preheat the oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  2. In a mixing bowl, combine rolled oats, flour, brown sugar, melted butter, salt, and 1/2 teaspoon cinnamon. Mix until crumbly.
  3. Press half of the oat mixture into the bottom of the prepared baking pan to form a crust.
  4. In another bowl, toss the diced apples with lemon juice, maple syrup, cornstarch, 1/2 teaspoon cinnamon, and nutmeg until well coated.
  5. Spread the apple mixture evenly over the crust in the baking pan.
  6. Sprinkle the remaining oat mixture over the apples, followed by the chopped pecans.
  7. Bake for 25-30 minutes or until the top is golden and the apples are bubbly.
  8. Allow to cool in the pan before slicing into bars. Serve warm or at room temperature.
