Ingredients:

  • 3 ripe bananas, mashed
  • 1/2 cup maple syrup
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose flour
  • 1/2 cup toasted pecans, chopped
  • 1/4 cup dark chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, combine the mashed bananas, maple syrup, melted coconut oil, and vanilla extract.
  3. Add the baking soda, salt, and ground cinnamon to the mixture and stir well.
  4. Gradually mix in the flour until just combined; do not overmix.
  5. Fold in the toasted pecans and dark chocolate chips if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
