Ingredients:

  • 2 cups butter beans, cooked and drained
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Juice of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese (optional for a vegetarian dish)

Instructions:

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the cherry tomatoes, sun-dried tomatoes, oregano, smoked paprika, salt, and pepper. Cook for about 5-7 minutes until the tomatoes are soft.
  4. Add the cooked butter beans to the skillet and gently fold them in, ensuring they are well coated with the tomato mixture.
  5. Cook for another 5 minutes to heat through, then squeeze over the lemon juice and stir in the fresh parsley.
  6. If using, sprinkle the grated Parmesan cheese before serving.
