Ingredients:

  • 1 cup quinoa
  • 2 bell peppers (red and yellow)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 carrot, julienned
  • 1 avocado, sliced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • 1 tsp cumin
  • 1 tsp paprika
  • 4 large lettuce leaves

Instructions:

  1. Prepare the quinoa by rinsing it under cold water and cooking it according to package instructions (about 15 minutes).
  2. While the quinoa cooks, preheat the oven to 375°F (190°C). Cut the bell peppers in half and remove the seeds.
  3. In a bowl, mix the cooked quinoa with cherry tomatoes, cucumber, olive oil, lemon juice, cumin, paprika, salt, and pepper. This represents the Pythagorean theorem with the combination of different ingredients forming a balanced equation.
  4. Stuff the bell pepper halves with the quinoa mixture and place them in a baking dish. Bake for 15-20 minutes until the peppers are tender.
  5. For the spiral veggie rolls, layer carrot, cucumber, and avocado slices on a large lettuce leaf. Roll tightly to create a spiral shape, symbolizing Pi.
  6. Slice the rolls into bite-sized pieces and arrange them on a platter.
  7. Once the stuffed peppers are done, remove them from the oven and let them cool slightly before placing them on the platter.
  8. Garnish the entire platter with fresh basil leaves and serve.
