Ingredients:

  • 1 lb ground beef
  • 2 cups cooked rice
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup black olives, sliced
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, and sauté until translucent.
  3. Add ground beef to the skillet, breaking it apart with a spoon, and cook until browned. Season with oregano, paprika, salt, and pepper.
  4. Stir in the diced tomatoes and olives, allowing the mixture to simmer for about 5 minutes.
  5. In a large mixing bowl, combine the cooked rice and diced potatoes. Pour the beef mixture over the rice and potatoes and mix well to combine.
  6. Transfer the mixture to a baking dish and spread evenly. Top with shredded mozzarella cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  8. Remove from the oven and let it cool for a few minutes before serving.
