Ingredients:

  • 1 cup brown rice
  • 2 cups vegetable broth or water
  • 1 can (14 oz) crushed tomatoes
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions:

  1. Rinse the brown rice under cold water until the water runs clear. In a pot, combine the rice and vegetable broth or water. Bring to a boil, then reduce to a simmer, cover, and cook for about 45 minutes or until the rice is tender and the liquid is absorbed.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic to the skillet, and cook for an additional minute until fragrant.
  4. Stir in the crushed tomatoes, oregano, basil, red pepper flakes, salt, and pepper. Allow the mixture to simmer for about 10-15 minutes to let the flavors meld together.
  5. Once the rice is cooked, fluff it with a fork and then mix it into the tomato mixture in the skillet. Stir until well combined and heated through.
  6. Serve warm, garnished with fresh parsley.
