Ingredients:

  • 1 cup bulgur wheat
  • 2 cups water
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1 small red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, bring water to a boil. Add bulgur, reduce heat, cover, and simmer for about 12-15 minutes until tender. Remove from heat and let cool.
