Mediterranean Chicken and Prawn Pasta

Ingredients:

  • 200g pasta (your choice)
  • 150g chicken breast, diced
  • 100g prawns, peeled and deveined
  • 50g chorizo, sliced
  • 100g broccolini, trimmed
  • 50g rocket
  • 2 tablespoons pesto
  • 1 tablespoon olive oil
  • 1 lemon, juiced
  • 30g grated cheese (Parmesan or similar)
  • Fresh parsley, chopped, for garnish
  • Salt and pepper, to taste

Instructions:

  1. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper.
  3. Add the sliced chorizo to the skillet and cook for an additional 2-3 minutes until slightly crispy.
  4. Add the prawns and broccolini to the skillet, cooking until the prawns are pink and the broccolini is tender, about 3-4 minutes.
  5. Stir in the cooked pasta, pesto, and reserved pasta water until well combined. Adjust seasoning with salt, pepper, and lemon juice to taste.
  6. Serve topped with fresh rocket, grated cheese, and chopped parsley.
