Ingredients:

  • 300g pasta (fusilli or penne)
  • 200g chicken breast, diced
  • 150g prawns, peeled and deveined
  • 100g chorizo, sliced
  • 2 cups rocket (arugula)
  • 1 cup broccolini, trimmed
  • 1/2 cup homemade or store-bought pesto
  • 1/4 cup grated cheese (Parmesan or similar)
  • 1 tablespoon olive oil
  • 1 lemon, juiced and zested
  • Fresh parsley, chopped for garnish
  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until golden and cooked through, about 5-7 minutes.
  3. Add the sliced chorizo to the skillet and sauté for another 2-3 minutes until it begins to crisp.
  4. Add the prawns to the skillet and cook until they turn pink, about 3-4 minutes.
  5. Stir in the broccolini and cook for 2 minutes until just tender.
  6. Add the cooked pasta and pesto to the skillet, tossing everything together until well combined. Squeeze in the lemon juice and sprinkle lemon zest over the top.
  7. Remove from heat and fold in the rocket. Adjust seasoning with salt and pepper if needed.
  8. Serve hot, garnished with grated cheese and chopped parsley.
