Ingredients:

  • 2 chicken breasts
  • 1 cup rice
  • 2 cups vegetable stock
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 bell pepper (any color), sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant.
  2. Season the chicken breasts with salt, pepper, oregano, and paprika. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked. Remove chicken from skillet and set aside.
  3. In the same skillet, add sliced bell pepper and mixed vegetables. Sauté for about 5 minutes until they are tender.
  4. Add rice to the skillet and stir to combine with the vegetables. Pour in vegetable stock and bring to a boil.
  5. Reduce the heat to low, cover, and let simmer for about 15-20 minutes, or until the rice is cooked and has absorbed the liquid.
  6. Slice the cooked chicken and serve it over the rice and vegetables. Garnish with fresh parsley.
