Ingredients:

  • 1 pound chicken breast, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Wooden skewers, soaked in water
  • 1/4 cup tahini
  • 2 tablespoons fresh lemon juice (for sauce)
  • 1-2 tablespoons water (to thin sauce)
  • Salt to taste
  • Chopped parsley for garnish

Instructions:

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken onto the soaked wooden skewers.
  4. Grill the skewers for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
  5. While the chicken is grilling, prepare the lemon-tahini sauce by combining tahini, lemon juice, water, and salt in a bowl. Adjust the water for desired consistency.
  6. Once the chicken is cooked, remove from the grill and let rest for a few minutes. Serve with the lemon-tahini sauce drizzled over the top and garnish with chopped parsley.
