Ingredients:

  • 2 boneless, skinless chicken breasts, sliced
  • 1 medium onion, sliced
  • 1 large carrot, julienned
  • 1 red capsicum, sliced
  • 1 cup green beans, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add onion and garlic, sautéing until the onion is translucent.
  5. Add the carrots, capsicum, and green beans, stirring frequently until the vegetables are tender-crisp, about 5 minutes.
  6. Return the chicken to the skillet and add oregano, smoked paprika, salt, and pepper.
  7. Stir to combine and heat through for another 2-3 minutes.
  8. Garnish with fresh parsley before serving.
