Ingredients:

  • 1 lb chicken breast, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 small corn tortillas
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1 avocado
  • 1/2 cup plain yogurt (or dairy-free yogurt)
  • 1 tbsp fresh dill, chopped
  • 1 tbsp olive oil (for tzatziki)
  • Salt to taste

Instructions:

  1. In a bowl, mix garlic, smoked paprika, cumin, oregano, lemon juice, olive oil, salt, and pepper. Add sliced chicken and marinate for at least 30 minutes.
  2. While chicken is marinating, prepare the avocado tzatziki. In a blender, combine avocado, yogurt, dill, olive oil, and salt. Blend until smooth and creamy. Adjust seasoning if necessary.
  3. Heat a grill pan over medium-high heat. Grill chicken slices for 5-7 minutes until cooked through and slightly charred.
  4. Warm the corn tortillas in another pan or on the grill for a few seconds on each side.
  5. Assemble the tacos by placing grilled chicken on each tortilla. Top with cherry tomatoes, cucumber, red onion, and drizzle with avocado tzatziki.
  6. Serve immediately, garnished with extra dill if desired.
