Mediterranean Chicken Thighs with Peppers and Onions

Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. In a large bowl, combine olive oil, minced garlic, oregano, paprika, salt, and pepper. Add the chicken thighs and coat them well with the marinade. Let it marinate for at least 30 minutes, or up to overnight in the refrigerator.
  2. Preheat your grill or grill pan over medium-high heat.
  3. Remove the chicken from the marinade and place it on the grill, skin-side down. Grill for about 7-8 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
  4. In the meantime, heat a large skillet over medium heat. Add a drizzle of olive oil and the sliced onions. Sauté until they are soft and translucent, about 5 minutes.
  5. Add the sliced peppers to the skillet and continue to sauté until they are tender, about 5-7 minutes. Season with salt and pepper to taste.
  6. Once the chicken is done, remove it from the grill and let it rest for a few minutes. Serve the chicken thighs on a platter, topped with the sautéed peppers and onions, and garnish with fresh parsley.
