Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 1 pint cherry tomatoes, halved
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sliced zucchini, halved cherry tomatoes, sliced onion, minced garlic, olive oil, oregano, salt, and pepper. Toss until the vegetables are well-coated.
  3. In a large oven-safe skillet, heat a tablespoon of olive oil over medium-high heat. Season the chicken breasts with salt and pepper, then sear them for 3-4 minutes on each side until golden brown.
