Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper (any color), diced
  • 1/4 red onion, finely chopped
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled (optional for vegan)
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1 lemon
  • 3 tablespoons extra-virgin olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano

Instructions:

  1. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and Kalamata olives.
