Ingredients:

  • 1 medium eggplant, diced
  • 1 red bell pepper, diced
  • 4 large eggs
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1/4 cup milk
  • Salt to taste

Instructions:

  1. Preheat the air fryer to 350°F (175°C).
  2. In a bowl, toss the diced eggplant and red bell pepper with olive oil and a pinch of salt. Spread them evenly in the air fryer basket.
