Ingredients:

  • 1 large zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small eggplant, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 slices whole grain bread
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped

Instructions:

  1. Preheat the grill or grill pan over medium heat.
  2. In a large bowl, combine the sliced zucchini, red bell pepper, yellow bell pepper, and eggplant. Drizzle with olive oil, then sprinkle with oregano, garlic powder, salt, and pepper. Toss to coat evenly.
  3. Grill the vegetables for about 5-7 minutes on each side, or until they are tender and have grill marks. Remove from heat and set aside.
  4. In a small bowl, mix together the Greek yogurt, lemon juice, dill, parsley, salt, and pepper to create a zesty herb spread.
  5. Toast the whole grain bread slices on the grill until golden brown.
  6. Spread the herb mixture on each slice of toasted bread. Layer the grilled vegetables on two slices, followed by crumbled feta cheese. Top with the other slices of bread to form a sandwich.
  7. Cut in half and serve warm.
