Ingredients:

  • 4 bone-in pork chops
  • 1/2 cup sundried tomatoes, packed in oil, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup chicken broth
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated parmesan cheese

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the pork chops with salt, pepper, oregano, and thyme on both sides.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until golden brown.
  4. Remove the pork chops from the skillet and set aside. In the same skillet, add the minced garlic and sundried tomatoes, sautéing for about 1 minute until fragrant.
  5. Pour in the chicken broth and stir to deglaze the pan, scraping up any browned bits from the bottom.
  6. Return the pork chops to the skillet, spooning some of the sundried tomato mixture over the top. Sprinkle with fresh basil and parmesan cheese.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
  8. Remove from the oven and let rest for a few minutes before serving. Enjoy!
