Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, combine the quinoa and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until all the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  4. Fluff the quinoa with a fork and allow it to cool to room temperature.
  5. In a large bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red onion, Kalamata olives, parsley, and mint.
  6. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  7. Pour the dressing over the salad and toss gently to combine.
  8. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld.
