Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 1 lemon, juiced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and water is absorbed.
  2. Fluff the quinoa with a fork and let it cool to room temperature.
  3. In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
  5. Add the cooled quinoa to the vegetable mixture and pour the dressing over. Toss gently to combine.
  6. Serve immediately or refrigerate for up to 2 days for the flavors to meld.
