Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced (red or yellow)
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Juice of 1 lemon
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, combine quinoa and water (or vegetable broth). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is cooked and water is absorbed. Fluff with a fork and let cool.
  2. In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, olives, feta cheese, parsley, and mint.
  3. In a small bowl, whisk together the lemon juice, olive oil, dried oregano, salt, and pepper.
  4. Add the cooled quinoa to the vegetable mixture and pour the dressing over the top. Toss gently to combine all ingredients well.
  5. Serve chilled or at room temperature, garnished with additional herbs if desired.
