Ingredients:

  • 8 oz spaghetti or linguine
  • 1 lb large shrimp, peeled and deveined
  • 2 cups cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/2 cup crumbled feta cheese
  • Juice of 1 lemon
  • Juice of 1 lime
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 tsp red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the spaghetti or linguine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using), and sauté for about 1 minute until fragrant.
  3. Add the cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  4. Pour in the white wine and bring to a simmer. Let it cook for about 2-3 minutes, allowing the alcohol to cook off.
  5. Add the shrimp to the skillet, season with salt and pepper, and cook for 3-4 minutes until the shrimp are pink and cooked through.
  6. Stir in the lemon and lime juice, then add the cooked pasta to the skillet. Toss everything together until well combined.
  7. Remove from heat and fold in the crumbled feta cheese.
  8. Serve warm, garnished with fresh parsley.
