Ingredients:

  • 8 oz pasta (spaghetti or fettuccine)
  • 1 lb shrimp, peeled and deveined
  • 1 cup mushrooms, sliced
  • 1 bell pepper, diced (red or yellow)
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sliced mushrooms and diced bell pepper to the skillet. Cook for 5-7 minutes until the vegetables are softened.
  4. Stir in the shrimp, oregano, red pepper flakes, salt, and pepper. Cook until the shrimp turn pink, about 4-5 minutes.
  5. Add the cherry tomatoes and cook for an additional 2-3 minutes until they soften.
  6. Toss the cooked pasta into the skillet with the shrimp and vegetables. Add lemon juice and mix well to combine.
  7. Serve warm, garnished with fresh parsley.
