Ingredients:

  • 1 block firm tofu, pressed and cubed
  • 2 cups fresh spinach, chopped
  • 2 cups kale, stems removed and chopped
  • 1 cup Kalamata olives, pitted and sliced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Juice of 1 lemon
  • 1/4 cup nutritional yeast (optional for a cheesy flavor)

Instructions:

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the cubed tofu and sauté until golden brown on all sides, about 8-10 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the chopped kale and spinach, cooking until wilted, about 3-5 minutes.
  4. Add the Kalamata olives, dried oregano, salt, and pepper. Stir to combine and cook for another 2 minutes.
  5. Remove from heat and drizzle with lemon juice and the remaining tablespoon of olive oil. If using, sprinkle nutritional yeast on top before serving.
  6. Serve warm, either on its own or over a bed of quinoa or brown rice for a heartier meal.
